Do we really observe nature or do we just observation artifacts of our methods of observation?

You observe nature.

You can observe trees, rocks, other people, etc.

When you are trying to observe what is hard to observe, e.g. microparticles, then, yes, interference effect pave the way for a good deal of projection.

But what is out there is out there, and we are relatively good at knowing what is out there.
